It is a round shaped vegetable . It is cooked in most of Indian houses on regular basis or on any occasion also. It is a very simple and delicious . In India , people usually like to have kaddu ki sabji with poori and roti also . This is my mother's speciality , everyone loves this recipe .
Ingredient
Pumpkin (kaddu) - 1 small sized
Salt - according to taste
Red chilli powder (mirchi) - 1/2 tsp
Turmeric (haldi) - 1/2 tsp
Sugar - 1 tsp
Cumin Seed (jeera) - 1 tsp
Dry fenugreek (sukhi methi) - 2 tsp
Oil - 3 tsp
Amchur (optional) - 1/4 tsp
Onion - 1/2 half cup
Green chilli - 1
tomato - 1/4 cup
Instructions
1. Cut the pumpkin into small cube shaped pieces .
2. Took out the kadhai (or pan ) on gas with high flame , add 3 tsp oil , then add cumin seeds (jeera) into it.
3. Add 1/2 half cup roughly chopped onion and finely chopped 1/4 cup tomato and 1 green chilli and saute well . Cook for 2-3 mint .
4. After that add the pumpkin pieces into the mixture .
5. Add 1 tsp salt (or according to taste ) 1/2 tsp red chilli powder and 1/2 tsp turmeric and cook for 5-7
minutes on high flame .
6. After that , add 1 tsp sugar to it and mix it well with sabji .
7. After completely cooked , add 1/4 tsp amchur and dry fenugreek to it . Your kaddu ki sabji is ready to serve . Serve it with roti or poori .
